I've configured Post via e-mail, but no posts seem to have been created, but emails are sitting in the mailbox I created. I don't know where to look for errors to progress, any ideas?

I don't know if Wordpress logs any errors, but the only thing you could have an error on are the Mail Server, Port, Login Name, or Password. Why don't you open a PressHarbor support ticket and submit your settings for those items so we can verify you got them right?
